Learn how to make the best chocolate brownies using fresh-milled einkorn flour and other simple ingredients. These are amazingly fudgy with a beautiful shiny, crinkly top to create the perfectly chewy, melt-in-your-mouth texture with a slight crunch.
1cupbrown sugar(If you don't have brown sugar, you can make your own by mixing 1 tablespoon of maple syrup or molasses into 1 cup of granulated sugar until completely combined.)
3eggs(room temperature)
1 tspsalt
1½tspvanilla extract
1¼cupeinkorn flour(I use freshly-milled flour for the highest nutritional content!)
1cupchocolate chips
Instructions
Preheat oven to 350℉.
Lightly grease a 9x13 baking dish with coconut oil or butter, or line with a piece of parchment paper.
Melt butter in a small saucepan or cast iron pan over low heat. Once melted, add the cacao powder and stir until completely combined. Set aside to cool.
Combine the eggs, granulated sugar and brown sugar in a stand mixer. Beat together on low-to-medium speed for 5 to 10 minutes until thoroughly combined. The mixture should be a light golden color by the time 10 minutes have passed.
Add the melted butter and chocolate to the eggs & sugar and mix until the chocolate is fully incorporated and the mixture turns from light golden to brown in color.
Add salt, vanilla extract and flour and mix until incorporated. Be careful not to overmix once you add the flour!
Fold in chocolate chips.
Transfer batter to pan, and spread it evenly throughout. Bake for 25 to 30 minutes, or until the edges start to crisp up. The center should be set but still soft.
Cool completely and serve with a glass of raw milk or homemade raw vanilla ice cream! For even more depth of flavor, we also like to sprinkle the tops with a little sea salt.

Whipping the eggs and sugar for 10 minutes is the key to getting that perfect crinkly top. Don't shorten or skip this part! You may substitute coconut sugar for brown sugar 1:1, but it may affect the final texture. For that reason, I recommend using brown sugar if available. If you don't have brown sugar on hand, you can make it yourself by mixing 1 cup of granulated sugar with 1 tbsp of black strap molasses or maple syrup.Einkorn is an ancient grain and already loaded with nutritional benefits. To get the healthiest version of this recipe, consider using freshly milled einkorn flour, as it will have the highest retained nutrient value. You can use all-purpose flour, but you won't need as much. Einkorn flour absorbs less water at a slower rate, so more of it is usually required in recipes that normally call for regular whole wheat flour. If you use AP flour, reduce the amount to 1 cup. Substitute chocolate chunks for the chocolate chips to achieve a richer texture!
