Fudgy Crinkly Top Einkorn Brownies Recipe
Equipment
- 1 Electric Mixer
Ingredients
- 8 oz unsalted butter (melted)
- 1 cup cacao powder
- 1 cup granulated cane sugar
- 1 cup brown sugar (If you don't have brown sugar, you can make your own by mixing 1 tablespoon of maple syrup or molasses into 1 cup of granulated sugar until completely combined.)
- 3 eggs (room temperature)
- 1 tsp salt
- 1½ tsp vanilla extract
- 1¼ cup einkorn flour (I use freshly-milled flour for the highest nutritional content!)
- 1 cup chocolate chips
Instructions
- Preheat oven to 350℉.
- Lightly grease a 9×13 baking dish with coconut oil or butter, or line with a piece of parchment paper.
- Melt butter in a small saucepan or cast iron pan over low heat. Once melted, add the cacao powder and stir until completely combined. Set aside to cool.

- Combine the eggs, granulated sugar and brown sugar in a stand mixer. Beat together on low-to-medium speed for 5 to 10 minutes until thoroughly combined. The mixture should be a light golden color by the time 10 minutes have passed.

- Add the melted butter and chocolate to the eggs & sugar and mix until the chocolate is fully incorporated and the mixture turns from light golden to brown in color.

- Add salt, vanilla extract and flour and mix until incorporated. Be careful not to overmix once you add the flour!

- Fold in chocolate chips.

- Transfer batter to pan, and spread it evenly throughout. Bake for 25 to 30 minutes, or until the edges start to crisp up. The center should be set but still soft.
- Cool completely and serve with a glass of raw milk or homemade raw vanilla ice cream! For even more depth of flavor, we also like to sprinkle the tops with a little sea salt.

Have you tried with unprocessed sugar options (honey or maple syrup) or a less sweet option (maybe around 1cup or less of sweeteners)?

They taste great and gave me a shiny top, but they were a lil too oily for me( where it felt like the recipe called for too much butter). I put 5 stars because I did use flax eggs instead of normal eggs ( egg allergy), coconut sugar so I did use alternatives that may have caused that 🥲 if anyone has any suggestions I’d love to hear!
